Coconut chuteny: Ingredients: 1) Fresh coconut grated -1/2 cup 2) Roasted chana dal- 1Tbsp 3) Green chillies- 2 No. 4) Cumin seeds-1tbsp. 5) Curry leaves- 4-5 No. 6) Ginger sliced- 1/2inch 7) Ice cubes- 2-4 8) Chilled water- as per requirement. 9) Salt to taste. Method: 1)Take a grinder / mixer . Add all above mentioned coconut chutney ingredients along with Ice cubes.. 2)Here we are adding Ice cubes , Because while grinding coconut, it releases it's own oil. So that it should not separate from its consistency we are adding Ice cubes to maintain its temperature while grinding. 3) Make fine and smooth paste. Adjust seasoning and consistency by adding more Chilled water. For chuteny tempering/tadka: 1) Coconut oil / Any oil-  1-1/2Tbsp 2) Mustard seeds- 1/2Tsp 3) Dry chillies- 2No. 4) Asafoetida- 1/4tsp 5) Curry leaves- 1Sprig. Method: 1)Take tadka pan. Medu Vada / Urad Vada: Ingredients: For Vada: 1) Urad dal soaked overnight -2cups 2) Roasted chana dal- 2Tbsp 3) Green chillies- 2-4no. 4) Corriender leaves- 2Tbsp. 5) Ginger Finley chopped- 1Tbsp. 6) Curry leaves chopped- 1sprig. 7) Fresh coconut chopped- 1/4cup. 8) Black paper corn crushed- 8-10. 9) Oil for Deep frying... 10) Salt to taste. 11) Water. Method : 1) Grind soaked Urad dal & roasted chana dal to get very fine paste of it. 2) Now kneed the paste by adding little little water spoon by spoon to fill Air i to batter.
