Khaman dhokla recipe :
Ingredients:
1)Besan 250 gm
2)Haldi 1tbsp
3)Sugar 1tbsp
4)Lemon 3tbsp
5)Ginger garlic paste 1tbsp
6)Hing 1/4tbsp
7)Red chilli powder 1/4tbsp
8)Oil 4tbsp
9)Curd- 1/2cup
10)Salt- 1/2tbsp
11)Baking powder-1/4tbsp
12)Baking soda-1/4Tbsp
13)Citric acid-1/4tbsp
Method:
1)Take a bowl,
Add- all above ingredients except Baking powder, Baking soda & Citric acid
2)Water -just thicker than thin consistency . (arround 100ml approximate.)
3)Mix all d ingredients well continuesly with d help of wisk...!
4)Bubbles will form
Rest d batter for 15 minutes...!
5)Preheat d steamer:
6)Now add Baking powder,
Baking soda & Citric acid
(alternative ingradient for above: /Eno 1Tbsp/~optional )
7)In batter and mix gently...Batter will get thickened.
8)Take container, Greece it wid oil well...
9)Pour batter in it... And steam for 15mins on medium to high flame...!
Meanwhile for tadka:
Ingredients:
1)oil 4tbsp
2)mustard seeds 1tbsp
3)curry leavee 5-6
4)Green chillies 4
5)Lemon juice 1tbsp
6)sugar 2tbsp.
7)roasted and crushed souf -1/2 tbsp
8) roasted and crushed dhaniya 1/2btbsp
Procedure:
1)Take pan heat , on medium flame
Add oil.
2)Add mustard seeds then, add curry leaves, green chillies...And Lemon juice 1tbsp
3)Add water 300ml ,Boil it .
4)Add sugar 2tbsp,Let it melt.And get another boil.
5)Now add roasted crushed souf and dhaniya in tadka, Off the flame.Keep aside .
Final step:
1)After 15 mins check dhokla is ready or not wid the help of toothpick or knife... if not steam further for 5more mins.
2)Let it cool down
3)After 15mins just cut them into squares or whatever shape we want and pour whole tadka in it
4)Garnish wid fresh finely chopped coriander leaves and grated fresh coconut...!
