Coconut chutney recipe
Coconut chuteny:
Ingredients:
1) Fresh coconut grated -1/2 cup
2) Roasted chana dal- 1Tbsp
3) Green chillies- 2 No.
4) Cumin seeds-1tbsp.
5) Curry leaves- 4-5 No.
6) Ginger sliced- 1/2inch
7) Ice cubes- 2-4
8) Chilled water- as per requirement.
9) Salt to taste.
Method:
1)Take a grinder / mixer . Add all above mentioned coconut chutney ingredients along with Ice cubes..
2)Here we are adding Ice cubes , Because while grinding coconut, it releases it's own oil. So that it should not separate from its consistency we are adding Ice cubes to maintain its temperature while grinding.
3) Make fine and smooth paste. Adjust seasoning and consistency by adding more Chilled water.
For chuteny tempering/tadka:
1) Coconut oil / Any oil- 1-1/2Tbsp
2) Mustard seeds- 1/2Tsp
3) Dry chillies- 2No.
4) Asafoetida- 1/4tsp
5) Curry leaves- 1Sprig.
Method:
1)Take tadka pan. Add some coconut oil.
2)Then add mustard seeds, after crackling of seeds, add Dry chillies. Saute it for few seconds. (5-10sec)
3)Now Add Asafoetida and curry leaves.
4) off the flame and Add the Tempering on our Coconut chuteny...
5)Garnish with fresh corriender and serve cold with Hot andd cryspy
