#Schezwan_Sauce_Chilli_
Paste:
Ingredients:
1) Kashmiri red chillies-200gm
2) Onion small, diced-1No.
3) Oil-4Tbsp
4) Ginger chopped- 1&1/2tbsp
5) Garlic chopped- 1&1/2tbsp
6) Fresh coriander chopped- 1/2cup
7) tomato sauce- 1& 1/2 Tbsp
8) soya sauce- 2&1/2tbsp
9) Vinegar- 3tbsp
10) Sugar 2tbsp
11) Chinese sesame oil- 1tbsp  (optional)
12) Salt to taste.
13) Tomato ketchup-1/2cup.
14) Corn flour-1tbsp

Procedure:
1) First of all remove all the seeds from Red chillies.
2) Take a pan, Add  water then add all the Red chillies & Onion into it.
3) Bring it to the boil, untill chillies get softer.
4) Cool it down completely, and blend it by adding 2tbsp oil into it.
5)Do not grind it completely, keep it a bit Coarse.
6)Now take Pan, Add remaining oil into it and add ginger and garlic.Give it a quick stir , it will start to browning.
7) At this stage add our chilli paste to it. and roast it nicely to remove it's rawness.
8) Then add Vinegar, soya sauce, sugar and salt as per taste.
9)Now saute it or roast it  for 10-12mins on high flame.
10)As it will start to release it's oil.
11)Now add Tomato ketchup, so that chutney will get a body.
12)At this stage in half cup of water add corn flour and pour it into our chutney.
13) Let it bring for boil, it'll take less than 1min.
Off the flame.
14) add freshly chopped coriander leaves into it.
15) Our spicy #Schezwan_Sauce_Chilli_Paste is Done.

~Serve it cold with Hot juicy Chicken Momos.
